1.Shorthorn Blue

Why We Love It: Shorthorn Blue by Yorkshire Organic Cheesemakers is a true testament to quality craftsmanship and sustainability. Since its founding in 2021, the brand has focused on producing exceptional cheeses using locally sourced low-yield organic milk. Their commitment to both quality and sustainability shines through in every bite, a dedication that helped them secure the title of Class Winner at the 2022 Virtual Cheese Awards. Beyond its deliciousness, Shorthorn Blue is a celebration of Yorkshire’s rich food heritage and a support to the local economy.

Tasting Notes: Shorthorn Blue offers a luxurious, rich, and buttery texture with a balanced savoury saltiness. Subtle caramel undertones add depth, making each bite both complex and indulgent.

Pairing Suggestions: Pair Shorthorn Blue with a glass of dessert wine or a rich port to complement the subtle caramel notes. It also works beautifully with crusty bread, dried fruits, or a drizzle of honey to enhance its creamy richness.

2. Double Yorkshire Wensleydale

Why We Love It: This golden-hued cheese reflects Wensleydale Creamery's deep dedication to tradition and heritage. Handcrafted using methods passed down since 1150 by French Cistercian monks and evolving through local farmers, Wensleydale Creamery continues to honour these centuries-old cheesemaking practices. Their commitment to local sourcing and craftsmanship is evident in each wheel, supporting both the regional economy and a storied food tradition that has spanned generations.

Tasting Notes: Rich and buttery, this cheese has a smooth, creamy texture that melts in your mouth. It finishes with a subtle tang, while the Annatto adds a distinct golden hue and a slightly nutty depth to its flavour profile.

Pairing Suggestions: Pair this Wensleydale cheese with a crisp white wine or a light ale to complement its creamy texture and tangy finish. It’s delightful with fresh apples, grapes, or a slice of fruitcake, accentuating its buttery richness and adding a touch of sweetness.

3. Meule de Savoir

Why We Love It: Meule de Savoir embodies the rich history and craftsmanship of traditional French cheesemaking. Created in the Beillevaire workshop in La Savoyarde, this cheese continues the centuries-old practice of preserving milk from the mountain pastures of Savoie. With its roots in a family-run business founded by Pascal and Claudine Beillevaire, the artisanal care that goes into every wheel reflects their dedication to quality and the preservation of France’s storied cheesemaking heritage.

Tasting Notes: Meule de Savoir offers a firm yet buttery texture that melts in the mouth. Its sweet flavour is enhanced by pronounced buttery and spicy notes, with a distinct fruitiness that adds layers of complexity to each bite.

Pairing Suggestions: Pair Meule de Savoir with a medium-bodied white wine, such as a Chardonnay, to complement its buttery and fruity notes. It also pairs beautifully with fresh pears, nuts, and rustic bread, allowing its rich, sweet flavour to truly shine.

4. Sinodun Hill

Why We Love It: Sinodun Hill embodies the essence of its landscape, crafted from the rich milk of goats grazing near the iconic Sinodun Hill. Cheesemakers Fraser Norton and Rachel Yarrow, who began their journey in 2014, have quickly made a mark with this artisanal creation, winning Best Artisan Cheese at the 2022 World Cheese Awards. Their dedication to quality and sustainability shines through, as their herd of over 160 goats is fed on wildflower meadow hay, resulting in a cheese that truly reflects the land and their craftsmanship.

Tasting Notes: Sinodun Hill delights with a fresh citrus flavour that intensifies as it ages, developing delicate notes of almond and red fruits. Its creamy, mousse-like texture is enhanced by an ivory rind that may seasonally develop a charming dusting of blue and grey moulds as it matures.

Pairing Suggestions: Pair Sinodun Hill with a crisp Sauvignon Blanc or a light rosé to complement its fresh citrus and almond notes. It also pairs beautifully with crusty baguettes, fresh berries, or a drizzle of honey, allowing the cheese's creamy texture and delicate flavours to shine.
